Lavender Infused Honey Scones
Scone Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1 tablespoon dried culinary lavender buds
- 1/2 cup unsalted butter, cold and cut into cubes
- 1/2 cup milk (whole milk or 2% works best)
- 1/4 cup Honey Truck Lavender Infused Honey
- 1 teaspoon vanilla extract
- 1 large egg
Glaze Ingredients
- 1 cup powdered sugar
- 2 tablespoons honey
- 1-2 tablespoons milk (adjust for desired consistency)
- Optional: a few lavender buds for garnish
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar. Stir in the dried lavender buds.
- Cut in the Butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Combine Wet Ingredients: In a separate bowl, whisk together the milk, honey, vanilla extract, and egg until well combined.
- Form the Dough: Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently with a fork or wooden spoon until the dough just comes together. Be careful not to overmix.
- Shape the Scones: Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a 1-inch thick round. Use a sharp knife or a pastry cutter to cut the dough into 8 wedges.
- Bake: Place the wedges onto the prepared baking sheet, spacing them apart. Bake for 15-18 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and let cool on a wire rack.
- Prepare the Glaze: In a small bowl, whisk together the powdered sugar, honey, and milk until smooth. Adjust the consistency by adding more milk if needed.
- Glaze the Scones: Once the scones are slightly cooled, drizzle the honey glaze over the top. If desired, sprinkle a few lavender buds on top for garnish.
