Datil Pepper Honey Mustard & Peach Roasted Chicken Thighs
Ingredients
- 1/2 cup whole grain mustard
- 1/4 cup Datil Pepper honey
- 1 Tablespoon Trader Joes chili onion crunch or 1/2 tablespoon chili flakes
- 1 tablespoon garlic powder
- 2 tsp Worcestershire sauce
- 1 tablespoon white vinegar
- 1 peach, diced
- 4 chicken thighs
Instructions
- Mix everything except the chicken thighs together in a small bowl. Place chicken thighs skin side down in a shallow dish and pour half the marinade over the top.
- Let sit for at least an hour.
- Preheat oven to 375 and bake chicken for 25 minutes.
- Remove and flip the chicken skin-side up and top with remaining marinade.
- Bake 10 more minutes & then broil for 2 minutes.
- Enjoy with roasted veggies!
